Because loving what you eat doesn’t have to cost the Earth…

When it’s so grey and wet outside all we want to do is curl up on our sofas with our favourite TV show and eat something yummy. And the last thing we want to think about is dragging ourselves outside to buy dinner so why not use up the stuff in your cupboards instead? Using up stuff you already have at home is kinder on your pocket and also eases the amount of food waste you produce each year.
Have a go at making this colourful couscous salad will fill you up and add colour to your life…
Carrot and Couscous Salad – serves 2
Half a cucumber
Several artichoke hearts (to taste)
Bowl of couscous – cooked
Italian ground cheese
For the dressing:
2 tablespoons of extra virgin olive oil
Salt and Pepper
A teaspoon of honey
• Firstly, fill half a bowl with couscous and add boiling water. Stir and cover for 5-7 minutes. When the couscous has grown into the bowl, put this in the fridge to cool up.
• Cut your tomatoes and carrots into bite-size chunks and your cucumber into an attractive pattern. This will go on the outside to make your salad look appealing.
• Mix together the liquid ingredients to make your dressing.
• Fold in the cold couscous with the carrot and tomato mix ad add your artichokes in at this stage. Place the cucumbers so that they circle the dish and splash over your dressing. Sprinkle over your cheese and enjoy!
And now for pudding! After all that delicious food we know that onesie is staying well and truly stuck to your body. So why not use up that canned fruit at the back of your cupboard? Try these pineapple grills to sweeten that palette…
Empty a can of pineapples (or use fresh if you do happen to have one!) and drizzle with maple or golden syrup. Sprinkle over some brown sugar and grill until the sugar has caramelised. Serve warm with Greek yoghurt, ice cream, crème fraiche or whatever you have in your fridge! Gorgeous topped with a dusting of cinnamon on top too! Yum!
